Tightwad Tip: Mexicanize That Leftover Turkey

OLYMPUS DIGITAL CAMERA         Tired of the endless leftover turkey sandwiches that follow Thanksgiving day? Here’s an inexpensive way to create a great meal with all of that leftover bird.

Pick up a package of Taco seasoning and your favorite Mexican tortillas (flour, taco, tostada) from the grocery store. Don’t forget your favorite toppings (lettuce, tomato, refried beans, cheese)

Heat up a large skillet sprayed with cooking spray and reheat the turkey.

Then, following the taco seasoning directions, add taco seasoning and water to the turkey and heat on medium low for about 10 minutes. Heat up your taco or tostada shells concurrently. If you are making burritos, you can just nuke a tortilla for 10-15 seconds before serving.

A pound of leftover turkey prepared in this way will serve 3-4 people.
